  • 2 tablespoons olive oil
  • Juice of 2 lemons
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
Bowls
  • 1/2 cup uncooked jasmine rice
  • 1 English cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
Toppings
  • 1/2 cup fat-free feta cheese
  • 2 tablespoons fresh parsley chopped

Method
 

Instructions
  1. Whisk together the olive oil, lemon juice, garlic, oregano, basil, onion powder, salt, and pepper.
  2. Add the chicken and marinate for at least 30 minutes or up to overnight.
  3. Cook the rice according to package directions.
  4. Grill or sauté the chicken until it reaches an internal temperature of 165°F. Let rest for 5 minutes, then slice.
  5. Divide the cooked rice among four meal prep containers.
  6. Top with sliced chicken, cucumber, tomatoes, and red onion.
  7. Sprinkle each bowl with fat-free feta and chopped parsley.
  8. Serve with fresh lemon wedges if desired.
